The head of the fillet, a noble and sometimes overlooked cut of beef. It has the same texture as the rest of the fillet but is not quite as uniform in shape as the fillet middle and because of this tiny difference, it's slightly cheaper. Works beautifully as a steak for 2-3 people gently sautéed with butter, garlic and herbs.
